Let testers press a key when they feel tense and find the flat stretches
Asking people afterwards how tense a level was gives you mush. A single key pressed in the moment gives you a curve over time. This entry builds that curve fairly, so one nervous finger does not look like a crowd and the delay of human reaction is corrected.
Why this works
Tension is felt inside and cannot be seen, so you ask people to mark it as it happens. They press a little after the moment, so shifting presses back and counting each person once per slice gives a curve of how many felt something, and when.
When not to use it
Don't treat flat stretches as faults when they are the calm before a scare, which a horror scene needs. Pressing also pulls people out of the moment, so for very immersive scenes ask them afterwards or watch their faces.
