The server freezes for a second every time it autosaves a full lobby
Saving everybody at once is simple and makes the whole game stutter on a regular beat. Here is how to spread the work over many moments, who goes first, and the one rule that keeps someone from waiting far too long.
Why this works
A freeze comes from doing a lot of work in one moment, not from the total amount. Spreading the same writing over many small turns, and serving whoever has waited longest first, keeps the game smooth and puts a ceiling on how much anyone can lose.
When not to use it
Not for a small group where one quick save is not noticed, or for changes that must never be lost, such as a purchase with real money. Those should be written straight away and not wait in a queue.
