Let the lake freeze slowly and melt quickly, so crossing needs a cold spell
One cold night should not carry a wagon across the lake, and one warm afternoon should not undo a week of frost. Here is how to grow and lose ice from daily temperatures, with a different pace each way, and to say on which days a person, or a heavy load, may cross.
Why this works
Ice builds up and wears away at different speeds, and what matters is the total left, not the weather of one day. A running sum with slow growth and fast loss makes a long cold spell necessary, and a thaw hurts at once.
When not to use it
Skip it in a world where the lake is frozen by magic or the season is fixed by the story, or when you need only a yes or no on a set date. Then simply decide it by hand and spare the player the daily weather.
