My crops do not grow while I am away, or all ripen the moment I return
Parts of the world that are not loaded stand still, so the farm is exactly as you left it, or the AI jumps it to the end. This entry calculates what should have happened during your absence, stage by stage, limited by the water that was there.
Why this works
Growth is progress through stages that each take a set time. Replaying the time away stage by stage, and using up water only while growing, gives the same state as if the farm had been running.
When not to use it
Skip the catch-up if the game should punish leaving, for example crops that wilt. Then define wilting as a stage and run it through the same catch-up.
